Cheese and olive wheels

Many moons ago, my mum always made (I think Delia Smith's) puff pastry hearts. It was always a signal of some exciting upcoming event, mostly Christmas. They really can have anything you want in them, but when I made them recently I only had a few bits at home. They're so easy that I feel like writing a recipe for them might be a bit silly but here's what you'll need:

  • One sheet pre made puff pastry
  • Pitted black olives
  • Cheddar cheese
  • Eggs
  • Thyme / rosemary or any other herbs you like

I told you this was easy.....start by taking the pre made puff pastry (you can make it yourself if you're a superstar) out of the fridge did 5-10 minutes. Once it's come to room temperature a bit roll it out. Fill the inside with grated cheddar and cut pitted olives and herbs you like). You could add tomato purée, ham, any other type of cheese etc. Roll it all up together horizontally and slice generously. Put on a baking tray with baking paper. Egg was the sides and top of the wheels. Put into a hot oven (220) - they won't need too long, so keep an eye on them and take them out when golden brown. Wish I had one now...
