Sticky Cherry Bakewell Buns

img_4132_original.jpg

I love cherry bakewell. It is one of my favourite combinations. I am actually, believe it or not, that crazy about eating cakes. I love making them but don't necessarily go crazy for eating them but I always find it really hard to resist anything cherry and almond. I remember finding this recipe in BBC Good Food magazine and tearing it out to keep in my permanent collection. The recipe can be found on their website https://www.bbcgoodfood.com/recipes/sticky-cherry-bakewell-buns

Some notes, do not overfill the buns. It is really tempting but regrettable when they end up with a soggy bottom. Use almond essence in the icing too. It honestly won't taste too almondy. To go full cherry bakewell use cherry jam if you like instead of raspberry. Know these make for an excellent breakfast in bed, so don't be overzealous in handing them out. Must make another batch immediately....
