Prawn & Courgette Bucatini

Ah the sun is shining and the weather is sweet. Do you remember that feeling? No neither do I. As I type this my Whatsapp is constantly beeping from everyone's pictures of snow and there is sleeting coming down just outside. This is a nice recipe come rain or shine but is great when courgettes are in season. I usually have an abundance of them from my father in laws allotment, which can be both a blessing and a curse. Bucatini is basically a fatter spaghetti. I've decided spaghetti has absolutely no place in my life, at least not a world where Bucatini exists. It can cling on to the sauce so much better and is just much more enjoyable to eat. To make this you will need:

  • Prawns
  • Courgettes
  • Garlic
  • Dried chilli flakes
  • Bucatini
  • Olive oil
  • Seasoning
  • Lemon

 Start by getting a large pot of boiling water on the go. Salt it like the sea but don't put oil in it, otherwise your pasta will never cling to the sauce. The sauce is quick, so once you've plunged your pasta in, get moving. Soften some garlic in some olive oil and add some chilli flakes. Add your sliced courgette, season and cook until they are soft. Then when the pasta is almost ready add your prawns. They'll only take a couple minutes. Add your pasta to the sauce, adding some pasta water if you need to loosen it all up a bit. Finish with some EVOO and a squeeze of lemon.
