Tagliatelle with Chorizo and King Prawns

I don't often make pasta with fish, I think in part because I love parmesan and don't like it when I don't have the opportunity to grate mountains of it all over my pasta and as well all know parmesan and fish doesn't mix but this is a really quick and easy pasta dish that takes no time at all to prepare - you will need:

  • Diced chorizo (or a whole chorizo you dice)
  • Raw king prawns
  • White wine or sherry vinegar
  • Chargrilled peppers (in the jar)
  • Tagliatelle (or any other pasta you like)
  • Garlic
  • Passata

Start by getting the water on for the pasta as the sauce won't take long. Get your pasta in and crack on with the sauce. Fry the diced chorizo in some olive oil and add a crushed whole garlic clove. When the chorizo has crisped up nicely, add some white wine and let the alcohol cook out. When it has add the passata and some sugar to counteract the sourness of the tomatoes. Let it cook down for a few minutes, then add the chargrilled peppers and the prawns. The prawns will only take a few minutes. Once they're cooked add your pasta and leave on the heat for a couple of minutes so the pasta sucks up the sauce, then serve. Would be great finished with some parsley or a pangrattato, enjoy!
