Halloumi Panzanella

I became a bit obsessed with Panzanella last year. I love acidic flavours and the capers and red wine vinegar make this a really savoury salad. Typically Panzanella features stale bread which has been soaked in water and then squeezed dry. I did use some stale bread but did not soak it first. Mine isn't a true version but it is delicious - to make it you will need:

  • Capers
  • Tomatoes
  • Red onion
  • Halloumi
  • Stale Bread
  • Extra virgin olive oil
  • Red wine vinegar

Cut or tear your bread up and leave aside to dry out as much as possible. Rinse off any capers you are using. Finely slice an onion, chop your tomatoes lengthways and mix with a handful of capers. Add a couple tablespoons of red wine vinegar and at least 6 tablespoons of olive oil. Season and taste and keep adjusting until it is to your taste. Add in your stale bread. Separately heat up a griddle pan or frying pan on a really high heat. Slice your halloumi lengthways and char it until its cooked on both sides and a little burnt around the edges. Top the salad with the halloumi and eat straight away.
