Rice Krispie Marshmallow Treats

It only took one day for me to decide to sacrifice the Easter eggs so I could make these. I like chocolate but I'll be honest, given the choice of chocolate or a bag of pick and mix, I'd definitely take the pick and mix. This was also a good opportunity to use the mini marshmallows from the hot chocolates of Winter and the Rice Krispies from the last time I decided to make something like this. Warning, these are SO good but SO addictive. I've already eaten quite a few...to make them you will need:

  • 100g Rice Krispies
  • 100g Mini Marshmallows
  • 100g Unsalted Butter
  • 400g Milk Chocolate
  • Sprinkles (optional)

snapseed-1Start by greasing (or I like to just spray PME cake release like there's no tomorrow) into a square loose bottomed cake tin. I think mine is 21cm by 21cm. Melt the butter and 100g of the chocolate on a low heat and add in the marshmallows. Whisk so all the ingredients become incorporated. When everything has melted mix in your rice krispies, you will have to work REALLY quickly or the mixture will harden. Do your best to spread into the tin and flatten the top. Not as easy as it sounds.snapseed-2Then melt the rest of the chocolate in a heatproof bowl either in the microwave or the old fashioned way. Pour and spread on top the rice krispie mixture. Then top with sprinkles if using. Place in the fridge to set. When it has set remove from the fridge and allow it to come back to room temperature before attempting to cut through them, then cut into squares and watch them disappear!snapseed
