Peach & Almond Puff Pastry Tart

I bought some peaches to eat as is but they weren’t very nice. They never ripened up so I thought it best to use them to cook with. I also had some puff pastry in the fridge and thought I’ll make a simple tart. This is so easy to make and is really nice for breakfast or elevenses.

You will need:

    Ground almonds
    Peaches
    Puff pastry
    Granulated sugar
    Vanilla extract
    Almond extract
    Cinnamon
    Honey
    Flaked almonds
    Apricot / plum jam

Start by rolling out your puff pastry. I used 4 large peaches and left quite a gap for a border so I rolled out a large square but you can roll any shape you like. Score around the edge to make a border and then wash the whole of the pastry with egg. Cut your peaches into segments and cover with 1/2 a cup of granulated sugar, a teaspoon of vanilla bean paste it extract, a drop of almond extract and I added some cinnamon honey I had but if you don't have any just add some cinnamon. Cover the area of the tart the peaches are going to go into with ground almonds, about 6 tablespoons. Add the mixed peaches on top and then cover with some flakes almonds.

Put into an oven at 200c until golden brown. Allow it to cool for a little and then heat up a teaspoon of jam, I used my homemade plum jam and just brush on top of the peaches. Serve warm with sone vanilla ice cream. Yum.
