Nectarine Sorbet

Last summer I got so into ice cream making that I seriously researched ice cream vans and was thinking about putting my ice creams on the road. Making your own is actually pretty easy and then you can make any flavour you like. Sorbets are so simple that if you're a bit nervous about trying ice cream, they're a great way to start. I had some nectarines that didn't ripen up enough to eat so thought I'd make them into a sorbet. You will need:

  • 4 large nectarines
  • half / whole cup of sugar
  • 1 tsp vanilla extract
  • 1 teaspoon cinnamon honey or if you don't have any, half a tsp cinnamon and a teaspoon honey
  • A squeeze of lemon juice
 Start by cutting up your nectarines into slices. Add all of the other ingredients and give it a good mix. Leave to macerate for about an hour. When the nectarines have released some juice and the sugar has dissolved a little, add it all into a blender until you have your desired consistency. You might want yours with more nectarine pieces in it, I personally blended it smooth. Then add to your ice cream maker. I have a kitchenaid attachment. Then freeze for at least 4 hours. Allow it to defrost for about 10 minutes until you try to scoop.
