Chocolate and Cherry Posset

I’m not a huge dessert person, I’d rather have a starter than a dessert but if I do go for a dessert then I usually like something a little bit lighter like ice cream or mousse. These chocolate and cherry possets are a lovely way to end a meal. They’re very rich and indulgent so you a little goes a long way.

Ingredients

600ml double cream

200g caster sugar

100g dark chocolate

A tablespoon cherry syrup

Method

Start by warming the cream and the sugar. Keep going until the sugar has been dissolved and then turn the heat up until it’s been bubbling for a minute. Then turn it off. Once it’s turned off but still warm, stir in the cherry syrup and the dark chocolate, which will melt from the residual heat. Pour into pots and cover with cling film. Once they reach room temperature, put them in the fridge to set. A perfect easy dessert that’s set to impress!
